Interesting question. It turns out that the Sodium Lauryl Sulphate CH₃(CH₂)₁₁OSO₃Na (MSDS) is the cause. According to the article, the chemical surpresses sweet sensors in tastebuds from functioning, therefore leaving sour and bitter being elaborated.
